Jerusalem Hollow is proud to present two strictly limited new releases.

“The Adrian” 2005

The Adrian has been crafted to create the best wine possible from the best components available. The wine is predominantly Cabernet Sauvignon (74%) with Tempranillo (13%) and Malbec (13%).

The colour is bright and crimson, with a ruby-red hue. There are scented aromas of graphite, smoke and bay leaf.

The palate offers elegance, rather than weight. It has harmony of pure berry fruit, charm, refinement and a soothing, delicate softness. It persists with seamless freshness and finishes with fine, noble tannins.

This wine can be cellared for up to 5 years.

The red wine is so named as a mark of respect for a loved family member who died suddenly earlier this year.

Jerusalem Hollow Sparkling 2005

The production of sparkling wine from Margaret River is a challenge; the goal is elegance rather than meagerness, ensuring the flavours are tight and precise, and at the same time avoiding the richness of ripe Australian fruit.

Harold Osborne skillfully created the the sparkling wine, using the traditional French Champagne method and allowing 2 years maturation which has added softness and complexity.

The 2005 vintage has lovely freshness with citrus, linear brilliance and classical Chardonnay structure. The extended time on yeast lees provides added creaminess, sophistication and the intention of seriousness with complex secondary characters emerging.

Overall, the tactile softness saturates the palate and a sense of finesse provides a gentle refined finish.
